I got this idea from our friend Jeff. He makes a HUGE breakfast for the week on Sunday night that way he can save himself time and energy each morning.
This really works out. I did this for my family this week and its now Tuesday and I have to make more. Cooper, the nine year old, can get up in the morning and warm up a healthy breakfast and start his day right.
Remember to keep it as clean as possible but this is what was added:
1 package of Pork sausage
1 green bell pepper
1 red bell pepper
Some onions
And 15 eggs
I noticed that I either didn’t use enough eggs or to much peppers. We had to cook more eggs this morning so just adjust the way you want.
Note- I usually have a shake in the morning and then eat this as my mid-morn meal. It heats up great!
I’ve decided to start my “lifestyle” change with the nice slow process of "getting back in the game" routine.
So starting Sunday I woke up thinking to myself “Today is the day that I will no consume gluten, soy or peanuts”
For Breakfast I had veggie omelets with a side of bacon at my father in laws birthday breakfast. I forgot to tell the waitress no cheese so I had to have my omelets with cheese but Swiss cheese (like that matters – its was processed either way) oh and I had a cup of tea that I brought from home and water
After breakfast – it was time for my Sunday Cappuccino from the local coffee shop. ( I KNOW NOT PALEO OR CLEAN)
We had family over for lunch so Lee and I had grilled hamburger patties with spinach and avocado and plantain chips.
For dinner (know this is the best part) was at The Coday’s house. Ryan is starting do dabble in eating Paleo so he made Carna Asada on the grill. Jessica made the yummy sides of fresh avocado, salsa and fresh corn tortilla’s and we had a nice Mexican meal without all the lard and process stuff.
I can honestly say, I felt great all day until I had a gluten filled beer. I became gassy and a little bit bloated so I will make that next time I say no thank you and just stick with Agua!
Monday at work – I figured I would be in trouble. The temptation of the vending machine in the break floor is so bad. Did you know you can use your debit card to get snacks now? Its just to easy but I had a plan! I made sure I packed my lunch and all of my snacks.
Lunch was – baked chicken with ½ cup of brown rice and 1 cup of spinach. It was good and by the end of the day I had energy. I wasn’t gassy and no itching for me. Day 2 wasn’t that bad… But its only just begun.
