It was a busy weekend for us – so stopping to make lunch is always a pain for me when there was nothing in the fridge to make. I didn’t want to leave the house to get food so I had to figure out what we should have for lunch. I found the following: Canned Tuna, Spinach, Strawberries and boiled eggs and this is what I came up with:
TUNA AND EGG LUNCH!!!
Canned Tuna seasoned
Spinach salad with olive oil and balsamlic vinager with Strawberries
Hard boiled eggs
This lunch would have cost us over $25 if we had gone to lunch. It was sooo good too. See so quick and easy!
I got this idea from our friend Jeff. He makes a HUGE breakfast for the week on Sunday night that way he can save himself time and energy each morning.
This really works out. I did this for my family this week and its now Tuesday and I have to make more. Cooper, the nine year old, can get up in the morning and warm up a healthy breakfast and start his day right.
Remember to keep it as clean as possible but this is what was added:
1 package of Pork sausage
1 green bell pepper
1 red bell pepper
Some onions
And 15 eggs
I noticed that I either didn’t use enough eggs or to much peppers. We had to cook more eggs this morning so just adjust the way you want.
Note- I usually have a shake in the morning and then eat this as my mid-morn meal. It heats up great!
I might be going crazy but Im having hot flashes at 36! Or I could be detoxing. I was able to get a good nights sleep last night but when I work up I was as sore as sore can be. Either the baby has gained 5 pounds over night or this Paleo/Clean Eating this is starting to take its toll.
All of my joints hurt this morning. I know that this a possible side effect of eating clean and a sign that your body is releasing all of that bad stuff in your system but I really feel like I was hit by a truck.
Believe it or not Sardines are a great source of them good Omega Oils.
Here is what we had the other day for lunch. I could give you the detailed instructions of what I put in to make this meal but honestly people tastes are so different and I never measure. I'm a pinch here and a pinch there type of cook.. Enjoy.
Sardines with onion seasoned to perfection. Avocado with salt and pepper. A side salad with homemade apple-cider vinegar and olive oil with a splash of Mrs. Dash!
I’ve decided to start my “lifestyle” change with the nice slow process of "getting back in the game" routine.
So starting Sunday I woke up thinking to myself “Today is the day that I will no consume gluten, soy or peanuts”
For Breakfast I had veggie omelets with a side of bacon at my father in laws birthday breakfast. I forgot to tell the waitress no cheese so I had to have my omelets with cheese but Swiss cheese (like that matters – its was processed either way) oh and I had a cup of tea that I brought from home and water
After breakfast – it was time for my Sunday Cappuccino from the local coffee shop. ( I KNOW NOT PALEO OR CLEAN)
We had family over for lunch so Lee and I had grilled hamburger patties with spinach and avocado and plantain chips.
For dinner (know this is the best part) was at The Coday’s house. Ryan is starting do dabble in eating Paleo so he made Carna Asada on the grill. Jessica made the yummy sides of fresh avocado, salsa and fresh corn tortilla’s and we had a nice Mexican meal without all the lard and process stuff.
I can honestly say, I felt great all day until I had a gluten filled beer. I became gassy and a little bit bloated so I will make that next time I say no thank you and just stick with Agua!
Monday at work – I figured I would be in trouble. The temptation of the vending machine in the break floor is so bad. Did you know you can use your debit card to get snacks now? Its just to easy but I had a plan! I made sure I packed my lunch and all of my snacks.
Lunch was – baked chicken with ½ cup of brown rice and 1 cup of spinach. It was good and by the end of the day I had energy. I wasn’t gassy and no itching for me. Day 2 wasn’t that bad… But its only just begun.
I know Im kind of rushing through this but I want to give you some back ground.
Paleo really changed my husband’s life the results from CrossFit and eating was so dramatic that his own mother couldn’t believe it. He stopped snoring and being tired all the time. I will post before and after pictures but here his Lee on our vacation in July of 2011.
Ok this blog isn’t about my husbands result but MY new adventure. While my husband was working out and eating right my belly was slowly starting to expand. I had cake and pies, wheat and soy all the things I should have but I couldn’t help it. I was pregnant and I cant stop eating. I wanted bread and sweets that were rich in texture and taste. I really tired to right but I couldn’t. My little bundle of joy was hungry all the time. I have an allergy to wheat soy and peanuts but I didn’t care. I ate all I could (except peanuts) and love every minute of it.
Here I am 3 days before I have birth our son....at 183! (excuse the messy bathroom)
UNTIL I GAVE BIRTH!!! The day that I delivered I was 183, I had gained 34 pounds, a month later I was down to 170 and today, 4 ½ month Im at 165. I am still not 100% Paleo but I feel like crap all the time. I am swollen and tired most days. I keep waiting the foods I am allergic to and then think to myself WHY! So from this day forward I am doing 2 things. #1 Paleo as much as I can then #2 Cleaning eating (I do need some variety in my life)
